With a culinary journey rooted in family traditions and sharpened through years of hands-on experience, Executive Chef Duane Ellison brings both heart and skill to the kitchen at Marina Grill. From his early days cooking alongside his grandmother to honing his craft in Atlantic City, Ellison has developed a passion for creating dishes that resonate with guests and celebrate the waterfront setting of one of Wilmington’s most beloved riverfront restaurants. Warm, thoughtful, and driven by a genuine love for food and hospitality, Chef Ellison is the creative force behind the flavors that keep diners returning to Marina Grill time and again.

What makes Marina Grill unique?
Our riverside setting is truly unmatched. The views of the boats drifting by, the unforgettable sunsets, and the energy of the events held here all contribute to the atmosphere our guests love. It creates a dining experience that feels special every time.
How would you describe the type of food you like to cook?
I’m not sure I can choose a single favorite style—each dish we offer brings something unique to the table. I genuinely enjoy preparing all dishes and believe every guest should try each at least once… or more if they fall in love with it!
What motivates and inspires you as a chef?
The opportunity to create something every day that our guests will truly enjoy. Knowing that people appreciate the food we serve—and choose to return for it—motivates me to keep pushing myself and crafting dishes with care.
What might diners not know about you?
Many people are surprised to learn that my first love wasn’t food—it was the alto saxophone. I haven’t played since high school, so I’m sure I’m a bit rusty, but music will always hold a special place in my heart.
Current favorite dish on the menu?
Carribean Jerk Chicken: Half chicken marinated in a Caribbean jerk sauce. Served with coconut rice, sauteed green beans, and topped with pineapple salsa
What’s your favorite local product or ingredient, and how do you use it on the Marina Grill menu?
Our seafood from local vendors. I tend to use them for our fresh catch of the day or our dinner features.
Favorite foodie city?
Philadelphia tops my list. The city has incredible flavor—and yes, Eagles fans, you can take that victory lap.
What’s your all-time best comfort food?
Mac and cheese. Simple, classic, and endlessly comforting.
Describe the best meal you’ve ever eaten.
One of my most memorable dining experiences was at Carmine’s. I first visited their location at the Tropicana in Atlantic City, though the original is in New York. Their Italian dishes were unforgettable.
Three songs on your current playlist?
My playlist tends to surprise people—I’m a true music lover with eclectic taste. You’ll hear everything from Sam Cooke, The Temptations, Prince, and Michael Jackson to Eric Church, Chris Stapleton, Jason Aldean, Tupac, UGK, New Edition, Guy, and Troop. Anyone who works with me knows music is always part of my day.
One important piece of advice you’d offer home cooks.
Never be afraid to experiment with new techniques, recipes, or ingredients. Some of the world’s best dishes were created by accident. Cook with your heart as much as your hands—food made with love always tastes better.
