MEET THE CHEF: DRAM YARD

Chef Jordan Keen, a Chicago native, has been immersed in the world of cooking since his early years, crafting meals for his family and honing his skills in kitchens across the nation. With a rich background in classical training and a culinary journey spanning over two decades, Wilmington and Dram Yard serve as the perfect canvas for him to showcase his passion and expertise.

What makes Dram Yard unique? 

The allure of Dram Yard lies in its unique space and vibe. The building, steeped in history, sets the stage for an unforgettable atmosphere and dining experience that we are proud to offer our guests. 


How would you describe the type of food you like to cook? 

New American, for lack of a better description. It encompasses nearly any kind of food that draws from global cuisines to adapt American staples.


What motivates and inspires you as a chef? 

I love making our guests happy through the food I cook and the dishes I create. I love being a part of those moments and memories. You always remember a great meal. 


What might diners not know about you? 

I was a roller derby referee for 5 years.

 

Current favorite dish on the Dram Yard menu? 

It's a tie between the Hamachi Collar – guajillo, chorizo, miso sweet corn cream and the Grilled Eggplant-mint yoghurt, salsa macha and watercress. I have been testing new dishes for our spring menu, which I'm excited about.



What's your favourite local product?

Currently, whole chickens are from Changing Ways Farm. I use everything, including the skin that we get crispy, for a finishing touch of my version of Chicken and Dumplings.


What's your favorite foodie city? 

I'm from Chicago, so I might be biased. That environment also helped shape me as a person and a chef. 


What's your all-time best comfort food? 

Pupusas or Pho 


Describe the best meal you've ever eaten. 

That's a tough one. The one that stood out in recent years was at Roister in Chicago last summer. I had the entire menu; it was one of the best meals I've had recently.

One important piece of advice you have for home cooks?

Experiment, have fun, make mistakes, and don't give up.
