A beloved recipe from Graylyn Estate, the Butterscotch Sugar Cookies are one of Mrs Nathalie Gray's signature treats, crafted with a perfect balance of buttery richness and the sweet, caramel-like flavor of butterscotch chips. A culinary homage to the Grays' Scottish terriers, Butter and Scotch, the cookies were frequently served during gatherings and events at Graylyn, becoming an iconic offering at the estate’s tea parties and festive celebrations.

Ingredients
1 lb butter, softened
8 oz. brown sugar
8 oz. white sugar
pinch of salt
3 eggs
1 tsp. vanilla extract
1 lb. all-purpose flour
1/4 c. butterscotch morsels
Instructions
1. Cream the butter and sugar together.
2. Add the eggs and vanilla extract.
3. Mix the flour, baking soda, and butterscotch morsels into the butter/sugar mixture until batter is smooth.
4. Portion mixture into 2 - 3.5 oz balls.
5. Place onto a greased baking sheet and bake at 375 for 10 - 12 minutes.
6. Cool at room temperature.
