MEET THE CHEF: PALOMA AT LELA'S

Chef Jimmie McDowell is a seasoned culinary professional whose career spans over three decades and a diverse range of experiences—from the vibrant kitchens of Las Vegas to the serene peaks of Utah and, now, the coastal charm of Wilmington. He began his culinary journey in Las Vegas in the early 1990s, where he discovered a deep passion for hospitality and service. Over the next 15+ years, he honed his skills and developed a reputation for excellence in cuisine and guest experience.



His path led him to Utah, where he met his wife of 20 years and spent 13 years as the Hospitality Director and Executive Chef of a premier ski resort. There, he blended high-level culinary creativity with the rugged elegance of mountain life, crafting dining experiences that paired beautifully with outdoor adventure. Now on the Coast, Chef McDowell brings his extensive experience and heartfelt approach to Paloma's, the signature restaurant at the newly opened Hotel Lela in Wilmington. At Paloma's, he continues his dedication to innovative cuisine, exceptional service, and creating meaningful connections through food while embracing his new life by the beach.

How would you describe the food style you like to cook?

American steakhouse and pasta. Now, with a Latin flare.


What motivates and inspires you as a chef? My grandmother is my #1 motivation and push myself each day to create new dishes. It is my passion to make great food that makes guests smile.


What might diners not know about you?

Oh, where do I begin? My first love was not food. I wanted to be a Maine Biologist. However, I told my grandmother I was going to become a chef at the age of 4.



What is your current favourite dish on the menu?

Beef Birria tacos


What's your favourite local produce and how do you use it on the menu?

Torta bread from Los Portales Supermarket on Kerr Ave. We use this fresh-baked bread on all our sandwiches.


Favorite foodie city?

Las Vegas


What's your all-time best comfort food?

Biscuits & Sausage Gravy with over-easy eggs and potatoes. HOMEMADE.


Describe the best meal you've ever eaten.

Tomahawk steak with red bliss potatoes and veg. In Charlotte Amalie, the capital of the United States Virgin Islands.
