MEET THE CHEF: MATT BOWLING OF RUTH CHRIS STEAKHOUSE

Born in the sunshine state of Florida and raised in beautiful North Carolina, Chef Matt Bowling's culinary journey began at a young age. His passion for cooking was ignited while working at a renowned Calabash-style seafood restaurant during high school. His talent and dedication were quickly recognized by his manager, who urged him to pursue a career as a chef. Fuelled by his ambition, Chef Bowling attended the prestigious Johnson and Wales culinary school in Charleston, SC post-graduation. Since then, he has honed his culinary skills, from hotels and fast casual to fine dining. In 1998, he joined Ruth Chris Steakhouse in Cary, NC, before heading the helm in Wilmington, NC, where he continues to elevate his craft with them.


What makes Ruth Chris unique?

The steaks are served on a sizzling 500-degree plate. Our perfected broiling method and seasoning techniques ensure each cut of USDA Prime beef we serve arrives cooked to perfection.


How would you describe the type of food you like to cook?

American-style fare with a Southern flare.


What motivates and inspires you as a chef?

Cooking makes me happy, and I love to see people feel that same way when I cook for them.


What do diners not know about you?

That I have 2 wonderful children.



What is your current favorite dish on the Ruth Chris menu?

The lobster mac and cheese, with cavatappi pasta, tender lobster, and a white cheddar sauce.


What's your favorite local product, and how do you use it?

We only serve the best American beef.


Best foodie city?

Charleston, South Carolina.


What's your all-time best comfort food?

Macaroni and cheese.


Describe the best meal you've ever eaten.

The best meal I have ever had is a simple dish of mac and cheese that my children made for me when I was younger. They knew I was working a lot, and they told me they wanted me to take a break from cooking, and they took it from there.
